Born in Argentina to Italian parents, Hugo Bertolini’s culinary journey began in 2000 when he started as a young chef in Spain. Since then, he has traveled across several countries in Latin America, Central America, Europe and Asia, honing his skills and expanding his culinary horizons. Hugo’s cooking style is centered around fire and original flavors, showcasing his passion for bold, authentic dishes. With a keen focus on environmental sustainability, he is committed to using local resources and promoting sustainable practices in the kitchen. Through his diverse experiences and dedication to his craft, Hugo continues to inspire others with his unique approach to culinary artistry.
After gaining valuable experience with Hyatt Hotels and working alongside Michelin-starred chefs like Gordon Ramsay, he joined Rosewood Phnom Penh in 2019 as Chef de Cuisine. His exceptional skills led to a promotion to Cluster Executive Sous Chef, where he played a pivotal role in opening Hoiana Resort, which features two new World Hotels, a golf course, and a beach club, totaling 1,000 rooms and 12 F&B outlets. Hugo’s culinary journey is defined by his passion.
Hugo Bertolini, has built a remarkable career marked by numerous hotel openings and a commitment to culinary excellence. He is proud to be a member of the prestigious Disciples de Escoffier, a globally recognized nonprofit association dedicated to promoting gastronomy. Recently appointed as Executive Chef of Rosewood Bangkok.
