In a move away from standard menus, the Head Sommelier, Xavier Thuizat, will help diners choose the wines and number of courses before working together with the Chef, Boris Campanella to create a perfect match.
Relying on the harmonious combination of two great skill sets, to elevate the pairing of wine and food into an art form: wines now set the tone and each menu is therefore unique as it will vary according to the wines selected.
