Koo Madame’s Beijing wood roasted duck is prepared by Chef Shi Jingjing in the traditional method which dates back to the Yuan dynasty.
The method is acclaimed by Chefs worldwide for its lengthy preparation process and attention to detail, carved tableside, the duck is classically served with thin pancakes, duck sauce, leek, cucumber, and granulated sugar.
